How to Cook Brown Rice
Brown rice is very nutritious. However, it does contain phytic acid which inhibits the absorption of critical nutrients. Soaking overnight will reduce phytic acid. See our post on soaking grains and legumes here
- 1 cup organic brown rice
- Filtered water
- 1 tablespoon Whey or milk kefir or apple cider vinegar
- Soak brown rice in 2 cups of warm (not hot) filtered water. Add 1 tablespoon of acid (whey from milk kefir or apple cider). Soak overnight for 8-12 hours.
- Drain and rinse well
- Cook soaked and rinsed brown rice in 2 cups of filtered water for 15 minutes with the cover on and 5 minutes with the cover off until all water has evaporated.
